I love summer and all the fresh vegetables, herbs and fruits that are available. I have an herb garden but not a vegetable one (just 2 tomato plants) so I was thrilled the other day when one of the guys I work with brought in a bag of cucumbers. I couldn’t wait to create a new version of Cucumber Salad.
- 3-4 medium cucumbers
- 1/2 Cup Mayo (I used Hellman’s LIght)
- 1 TBLS chopped chives
- Good pinch of Dill
- 2 teaspoons Lemon Juice
- 1 Clove Garlic – finely chopped
- Salt and Pepper to taste
Chop the cucumbers and set aside. Blend all other ingredients except salt and pepper in a separate bowl. Do a little taste test to see if you need more dill or more lemon juice. (This will also make a great blend for a sandwich spread so keep it in mind the next time you grill burgers!) Salt and pepper the cucumbers to your taste then stir the mayo mixture into the cucumbers. That’s it – so simple and yet so delicious!
I chose to pair this with a 2007 Grande Reserve Naoussa Boutari, a light bodied red wine that serves well a little chilled and pairs well with salads and lighter fare foods.
